The Founder
My name is Mikel Aguinaga
"I wanted to develop desserts that anyone can eat, regardless of their diet or restrictions."
I've been studying and practicing pastry since I was 10 years old. What started as a passion became a mission when I saw how many people around me — family members, friends — were constantly excluded from the table because of dietary restrictions.
At 18, with seed funding from the City of McAllen and years of craft behind me, I built Patisserie by M to prove that inclusive doesn't mean inferior — that sugar-free can be indulgent, that gluten-free can be exceptional, and that everyone deserves the good stuff.
